Weekday Wrap Up 6

Here are the latest pictures from the 5 o’clock rush kitchen for this week’s Weekday Wrap Up.

The pictures are the Dinner Spread we enjoyed at the trailer with friends. When we entertain at the trailer, or Glamping, there is always lots of food and lots of variety. And we utilize the charcoal BBQ for everything, even dessert.

Dinner Spread Menu included:

Main Dishes were Salmon steamed in foil, Fresh Caught Pickerel which was pan-fried, Smoked Scallops, and Chicken Breasts.

Sides were Wild Rice and Mashed Potatoes with garlic and brie. Mozzarella, tomatoes with Homemade Pesto and balsamic glaze. And a Spinach Salad with tomatoes and peppers.

Dessert was Grilled Ontario Peaches with Ontario Maple Syrup.

This is the last long weekend of the summer in Canada before school starts. 😦

Back to more consistent dinners, after school activities and  the dreaded school lunches. 😛

Weekday Wrap Up 6

Catch of the Day! Pickerel and Silver Bass

We were lucky enough to enjoy this Pickerel and some Silver Bass for dinner from when my DH and DD went fishing on Lake Erie.

Look Mom! Dinner tonight is Pickerel caught on Lake Erie.

Silver Bass, is a fish that my DH and fishing buddy usually throw back when they are out on the lake. My DH decided to keep a few to give the fish a try. After doing some research, many fishermen do keep the Silver Bass and recommend soak the fish in milk for at least an hour or overnight.

Weekday Wrap Up 4

I apologize for no Weekday Wrap Up post for last week. It was a busy week with my DD returning from her trip to Italy and the rest of the week spent at the trailer. So I assumed that no one wanted to see the pictures of burgers and dogs or our trip to KFC cause the weather was so soppy!

On the holiday weekend, the smoker was hard at work. This time, it was a pork shoulder, a side of salmon and a whole chicken.

Tip: Utilize the freezer and pack individual portions of leftover smoked meat and salmon for Back-to-School lunches. Pics included.

This weekend our trailer park is hosting its annual ‘Pasta Dinner’. All the ‘Italians’ in the park make a homemade pasta and sausage for dinner with all the fixings. YUM!

No cooking for me on Saturday 😉

I’m still struggling and eating my cold dinners as I try to get decent pictures using my DSLR. Any tips or pointers on getting better food pictures would be greatly appreciated.

Celebrating Canadian Food

A celebration of Food Day Canada, and part of Jackson-Triggs Niagara Summer Concert Series at the Estate Amphitheatre, Niagara-on-the-Lake, the event takes place August 2, 2014. There are 250 tickets including dinner ($175 plus taxes) available, with 350 more at $75 for the Canadian Table Conversation, dessert, icewine and music.

Superb food, wine, conversation and music will take centre stage at Around the Canadian Table, in celebration of Food Day Canada. In support of the Les Marmitons Bursary Fund with the Niagara College Foundation, the region’s top chefs will join farmers, educators, musicians, and Food Day Canada’s Anita Stewart for a unique celebration of all that the season has to offer in Niagara.

The chefs include John Horne (Canoe Restaurant), Tim Mackiddie, (Great Estates of Niagara), David Watt (The Garrison House, Niagara on the Lake), Andrew McLeod (Spencer’s on the Waterfront, Burlington), Erik Peacock (Wellington Court, St. Catharines), Anthony Greco (Zest Restaurant, Fonthill), Mark Picone (Canadian Food and Wine Institute (CFWI) at Niagara College and Mark Picone Culinary Studio, Vineland) and Food Network star, Anna Olson.

What a great event for Canadian foodies to attend and celebrate the farmers and chefs of the area.

I need to persuade my ‘foodie’ buddy to buy tickets. How can she refuse food, shopping and of course Niagara wine! 😉
